Cheers to the Chinese New Year with "This Little Lychee of Mine"

2017 is the year of the Rooster, specifically the Fire Rooster. People born in a Rooster year tend to be courageous, hardworking, and confident. To celebrate the year ahead, we're enjoying the "This Little Lychee of Mine." This cocktail is light and refreshing, with just a touch of sweetness.

1.5 oz KOVAL Dry Gin
1 oz Lillet Blanc
.75 oz Lychee juice*
1/4 tsp Rose water
 
Combine all ingredients with ice. Shake and strain into a cocktail glass. Garnish with a lime peel.
 
*For the lychee juice, blend one 20 oz can of lychees in syrup. Strain through a mesh sieve and discard the solids. Refrigerate the juice for about an hour, until chilled.
